Okay - this is a new house favorite!!! I should have taken a picture before we ate it. lol. It was SOOOO beautiful and smelled so good, we all just dug in like crazy people!
Baked Penne
16 oz can of Hunts Vegetable Spagetti Sauce
About 2 cups of whole grain penne
1/3 onion - chopped
1 clove garlic - chopped
1/3 cup of veggie "beef"
1/2 of a 7 oz package of vegan mozzerella shreds
onion powder, garlic powder and salt to taste
Preheat over to 400 degrees. Spray a loaf pan with non stick cooking spray. Mix all ingredients in loaf pan except "cheese". Remember, you don't have to cook the noodles before hand! WOOT. Add your spices in and mix. Sprinkle your "cheese" on top of loaf pan, bake for about one hour until sauce is nicely absorbed by pasta. You may want to cover top loosly with foil about 1/2 way through so the "cheese" does not over-brown. Let cool about 5 min. before serving
This cuts and plates cleanly and beautifully!
