Vegan Libre has a easy and uber good recipe for vegan cashew cheeze here.

Hi! thanks for the kind words...

one thing I will suggest is to soak the cashews for 1-2 hours in water before processing them. One of my readers explained this improves the digestiveness of the "cheese" - I can attest that without doing this, it gets "heavy" for your stomach if you eat more than a small amount. So give the soaking a try if you make this, or go easy with the portions :)
