BBQ Chick Peas over Pasta


Another Favorite tonight...we're on a roll - WOOT!

15 oz can Chick Peas - rinsed and drained
1/3 of onion-chopped
BBQ sauce to cover Baked Beans. (I'm guessing around 1/3 cup)

Spray a casserole dish with oil, mix above ingerdients until beans are well coated. Cover. Cook at 350 for 1 hr.

Noodles:
Either eggless "egg" noodles or penne would work best in this dish
1t chipolte powder
1t vegan mayo
2 T vegan margarine
Salt to taste

Cook and drain pasta. Stir in chipolte, mayo, margarine and salt. 

Dish pasta on plate and top with beans. Serve with slaw.

* If you have to cook for a meat eater (like I do), you can put a few kilbasa sliced lengthwise in a different casserole dish. Cover with BBQ sauce. Cover their dish also and bake at 350 along with yours. Serve over pasta.
