Scrambled Tofu


The thing I love about scrambled tofu, is after breakfast, there is usually enough left over for scrambled tofu sandwiches - yum!!!

Todays tofu was simple. It had curry, onions, green onions, garlic, and salt.

The recipe is approx:
1 pkg extra firm tofu - crumbled
1/2 large onion - chopped and sauted in oil
1 green onion - chopped and sauted in oil
2T curry powder
1t garlic
2t salt

Saute the onions in oil (in a fry pan- but you probably figured that out ;), add crumbled tofu and spices, mix and cook about 10 minutes until most of the water is out of the tofu. Serve warm. I had mine with home-made bread. Nummy

Gee...think I got my protein today? ;) Ha!

Where do you get your protein from? Just kidding! Ugh I hate when people ask that. Anyways, I don't make scrambled tofu often enough. Looks good though.
