We have a winner!! Introducing: Lentil Nut Loaf


This is better than meatloaf ever DREAMED of being!!

For the nut in all of us! Sometimes you feel like a nut. Sometimes you don’t.

1 cup of thickly stewed lentils – drain liquid and reserve
1 Tablespoon onion powder
1 Tablespoon garlic powder
1 Tablespoon dried cilantro
1/2 cup chopped nuts of your choice

1/4 cup ketchup

1/2 cup bread crumbs
1/2 cup shredded rice mozzarella grated cheese


Mix all the ingredients and place in a bowl. If too dry, add reserved lentil liquid 1 Tablespoon at a time. Mixture should be dense and hefty. Shape into meat loaf pan sprayed with cooking oil, and bake at 375 for 25 minutes or until a toothpick placed in the center comes out clean. Serve with mashed potatoes, brown gravy and a salad.
