Sweet Potato Curried Soup


Oh yeah!!!!!!!!!!!!!!!!!!!!!!!!!! Need I say more? Well, okay..it's sweet and curried with just the right depth. Enjoy!!

1 small onion -chopped
1 garlic clove - chopped
1 small-medium sweet potato - chopped
3 cups vegetable stock
1/2c dried lentils
1teaspoon curry powder
1 teaspoon salt
3/4t black pepper
1 5.5-oz can coconut milk
oil for frying

Saute onion and garlic in oil until onion is translucent. Add remaining ingredients except coconut milk and simmer about 20-25 minutes. Add coconut milk. Puree 1/2 soup in blender and return to pot. Wonderful with fresh bread or rice and a salad.
